My Top 5 Fave Vegan Recipes! 

I’ve been vegan for about 5-6 years now and to begin with legit ate beans on toast for most dinner’s because I had no idea where to start! 

After much experimenting on what works best for me, a predominantly whole food plant based diet is what I find gives me the most energy and feel my best. Contrary to popular belief, you can get all your protein needs met by eating this way. It also keeps things really simple, no-one wants to come home from work and spend 2 hours cooking with ingredients no-one has ever heard of! 

That being said, it's super important to fuel yourself adequately or performance in training sessions will suffer. Having go - to meals each week makes it really easy to stay on track with nutrition.

Now I have a big base of recipes as my cooking has improved and I'm here to share my current top 5 with you all!

🎃Pumpkin Spiced Pancakes 🎃

My current obsession 😂  Topped with cinnamon apples! Really easy to make and super satisfying, this will keep you full for hours! 😍

🎃 75g pumpkin puree (roast your pumpkin then blend the filling, done!)
🎃 150g plain flour
🎃 3 Tbsp sugar
🎃180ml soya milk (Or Oat)
🎃 Tsp cinnamon
🎃 1/2 Tsp nutmeg
🎃1/2 tsp ginger
🎃1 Tbsp baking powder

🥞Blend everything then cook in a non- stick frying pan!

🥞Usually makes 4-5 big pancakes, could probs serve 2 but i eat them all because Team Grit OCR training sessions are haaaard and food is fuel! 💁‍♀️

🌶 Crunchy Cauliflower Bites- with a spicy kick! 🌶 

 This one would be fab for lil sides at dinner parties or just for yourself as a snack 💁‍♀️😍

🌶 1/2 head cauliflower
🌶Cornflakes
🌶4 tbsp plain flour
🌶 200ml plant milk- (i used oat)
🌶 Tsp smoked paprika
🌶Tsp Garlic powder
🌶Tsp chilli powder (adjust to suit you!)
🌶Salt to taste
🌶 I added hot sauce too ha but optional!

😋 Chop the cauliflower into bite size pieces. Then pour some cornflakes into a bowl and crush them up so they are fairly small (but not annihilated!) Mix the flour in with the plant milk then add in all your spices- it should be fairly thick. Once this is all ready you can dip your cauliflower into the batter mix, then dip into the cornflake bowl to cover in crispyness 😍 Pop in the oven on 200 for 20-30 mins!

🌱Sweet Potato + Chickpea Curry - aka rainbow curry 🌱

You can literally chuck any leftover veggies you have in this one so its great at the end of the week before a big shop.

🌱1 big sweet potato (chopped and roasted)
🌱 1 can chickpeas
🌱 1 can tinned tomatoes
🌱 200g plain soya yogurt
🌱1 red pepper
🌱 1 Carrot
🌱 Half Courgette
🌱 200g mushrooms
🌱1 onion
🌱 Peas
🌱handful spinach
🌱 Curry Powder of choice (we love the madras)

😋 Fry off your veggies and onion then literally add everything in and leave it to simmer for 20 min. Serve with rice ta daaa 😁


🍚Ultimate Spicy Rice 🍚

This is my Husband Phil’s special! It’s REAL simple and quick - if you like Uncle Ben’s Mexican rice this is for you; it’s even better than that because it’s fresh!! 😍

🌶 300g Rice
🌶 1 Green Pepper
🌶 1 Red Pepper
🌶  1 Onion
🌶 50-75g Frozen Sweetcorn
🌶 1 Can Kidney Beans in spicy sauce
🌶 2- 3 Tbsp Paprika
🌶 1 Tbsp Chilli Powder
🌶 Tsp Salt

🍚Pour boiling water into the pan with rice, cook until the rice has just started coming to the top of the pan. Meanwhile, fry off the onion, peppers and sweetcorn.

🍚 Drain the rice and put it in the frying pan with the veggies. Add in the spices + kidney beans, stir for a couple if mins then serve 😁

🍠Sweet Potato Brownies 🍠

If you have a sweet tooth these are for you! So gooey and fudgey! 

🍠1 Cup cooked sweet potato
🍠2 Cups Self Raising Flour
🍠3/4 Cup Cocoa Powder
🍠 1 Cup Sugar
🍠1/2 Cup almond milk
🍠1 tsp baking powder
🍠1/2 Cup Water
🍠1/2 Cup Dark Choc Chips

😋Mix it all together in a bowl- it should be fairly thick but still mixable - you may need extra water. Pour into a brownie tin and bake at 180 for half an hour 😋
